Wood For Barbecue: Enjoy Smoked Food Using Different Woods



The Upper Galilee region of northern Israel is home to some of the country's highest mountains, reaching more than a kilometer (five-eighths of a mile) into the sky. This region may be a great place to grow wine grapes; the days are hot, the nights are cold, and the soil is poor. What more could a winemaker want? Over two millennia ago people grew wine grapes in this very area. Today's winery was founded back in the year 2000. It encompasses five vineyards with 90% red and 10% white grapes that turn into 80,000 cases in 2010. If you are in the neighborhood make sure to tour their visitor's center.

All foods at the seder will be kosher and grape juice will be substituted for the wine that is customarily drunk. Attendees will be able to choose between cooking brisket in a slow cooker or salmon for the main course. All ages are welcome, but there are no group or child rates. I will go into more depth about controlling the fire in coming pages but ideally you'd like to smoke the brisket at an average temperature of 200 degrees. It can fluctuate but try to keep it in this window.

Now for slow cooking brisket TOMATO CONFIT: cut the skinned tomatoes in half and seed them. Then cut the halves into wedges. Place them in a small slow cooking brisket and sprinkle them with chopped fresh thyme, slivered fresh garlic, salt and pepper. Then drizzle them with olive oil. Cover and cook them on LOW heat for 6-7 hours or until they are meltingly tender but still hold their shapes. If you like you can also cook them on HIGH heat for 3-4 hours and you'll get the same result.

However, this is not to say that the brisket should contain no fat. In fact, good quality meat is defined in part by the degree of marbling, the amount of intra-muscular fat in the meat. And with brisket there is also the question of exterior fat.

With both parents out working all day, it can be difficult to make good quality meals. If mom and dad both get home at five or six in the evening, after a long day at work, the thought of having to make dinner from scratch can be a daunting one. This is one of the main reasons that crockpot cooking is taking off again in a big way. Throwing some ingredients into the crockpot in the morning and leaving the beef brisket green egg to cook to perfection by itself is very tempting.

At the first sips the wine was round and long with balanced tannins and acidity, but somewhat thin, Japanese rice crackers thickened it marginally. My initial meal involved slow cooking beef. In response the wine came out essentially as before but was sweet; a change that was not entirely pleasant. The accompanying potatoes reduced this sweetness and my glass displayed good acidity and some fruit. Sweet potatoes rendered the liquid short but round. A side dish of peas made our Italian friend long and subtle but once again too sweet. Adding a generous amount of Chinese chili sauce to the meat rendered the wine fairly long but still too sweet.

Any large leftover pieces, once cold, should be wrapped in saran wrap first and then foil. In a 300 degree oven it takes a whole piece about 3 hours to heat up, so that is about an hour for every 2 pounds or so, I think..
